Introduction

What the Chapter believes. A short declaration to be read aloud at inductions, printed in programmes and used as the spine of the Chapter’s films.

Version 01

Manifesto 01 / 02

A kitchen is no small place.

It is where bread rises.
Where stock reduces in the early hours.
Where a young cook learns what a knife can do.

We believe mastery is earned one shift at a time,
and that what looks effortless on a plate
took years to make so.

We believe the first duty of a master is to teach.

Knowledge is light.
We hand it forward.

Manifesto 02 / 02

We do not sell recognition.

We watch the work.
We ask the chefs who know it.
We confer it at table, among peers.

We honour the cooks who taught us
by teaching the cooks who will outlast us.

We host. We welcome. We feed.

The work speaks.
We do not need to.

Recognised, never bought.
